Restaurant Style Mexican Cauliflower Rice
In my house, we make some type of Mexican food nearly every week. In general, we try to eat healthy and usually go for lots of veggies, low carbs and healthy fats. While nothing beats real, restaurant style Mexican rice, when we are on a healthy kick, I usually just skip cooking up rice and beans. But what about those days when you really just gotta have that rice?
Enter my new favorite: Restaurant Style Mexican Cauliflower Rice. This recipe has everything you love about Mexican rice with a healthy twist that will leave you feeling great. |
Restaurant Style Mexican Cauliflower Rice
Ingredients
- 1/4 onion
- 2 cloves garlic
- 1 bag frozen cauliflower rice
- 1 tbsp tomato paste
- 1 tsp salt
- t tsp cumin
- 2 tbsp olive oil
Instructions
- Heat the olive oil over medium high heat.
- Add onion and suatee until it begins to turn translucent. Add in the galric and continue to sautee another 2 or so minutes.
- Add in the tomato paste and mix well.
- Add in the frozen cauliflower and cook on high, stirring frequently to avoid it burning.
- Cook the cauliflower until it is starting to just barely crisp.
- Add in the salt and cumin and cook another 2-3 minutes, stirring frequently.
- Top with cilantro and enjoy.
