Extra Fluffy Pancakes for Cozy Weekends

There are some recipes that don’t just feed you, they hold memories.
This pancake recipe is one of those for me. I first developed it years ago when I was working as a nanny. Every Friday, the kids and I had a standing tradition: Pancake Fridays. It was our little ritual to end the week with slow mornings, stacks of fluffy pancakes, and the kind of comfort food that feels like a warm hug before the day even really begins.
Back then, I wanted a pancake that was reliable, fluffy, and simple enough to make without overthinking it. One that didn’t require fancy ingredients, but still felt special. After plenty of trial and error, this recipe became our go-to.
Now, years later, I’m making the same pancakes for my own family, usually on cozy weekends when we’re not rushing anywhere and the morning feels soft and unhurried. Some things really do come full circle.
Why These Pancakes Are So Fluffy
The magic here is simple:
- Buttermilk (or a quick homemade version) for tenderness
- Baking powder for lift
- A short resting time to let the batter activate
- Low and slow heat so they cook evenly without burning
The result is a pancake that’s light, tall, and pillowy on the inside, with just the right amount of golden crisp on the outside.

- If using milk and vinegar, stir them together first and set aside for a few minutes to create a buttermilk substitute.
- In a large bowl, combine the flour, baking powder, sugar, and salt.
- Add the oil and beaten egg to the dry ingredients.
- Pour in the buttermilk and gently mix until just combined and no large lumps remain.
- Let the batter rest for a few minutes. This important step helps activate the baking powder and creates extra fluff.
- Heat a nonstick skillet over medium-low heat. Avoid letting the pan get too hot.
- Pour about 1/3 to 1/2 cup of batter into the pan for each pancake.
- Cook for a few minutes until most of the bubbles on the surface have popped.
- Flip and cook for another 2–3 minutes, until golden and cooked through.
- Serve warm with butter and syrup.

These pancakes aren’t fancy and that’s exactly why I love them. They’re the kind of recipe you come back to again and again. The kind you memorize. The kind your kids will eventually ask for by name.
